Although we have cooked all over the world, for various presidential delegations, this was certainly one of our biggest challenges.
Cooking for the delegation in the Vatican was challenging from several sides: the menu, the transportation and storage of the food, and the special protocols we had to adhere to.
Istrian food in the Vatican
We had no choice but to gather a couple of farmers and food producers in order to present Istria in the best light. Some of them were Pisinum, Zigante, Oio Vivo and many others…The dinner was organized for 32 guests.
From appetizer to dessert in 4 courses
The appetizer was Istrian pjat, which consisted of the best salami and sausages that Istria has to offer. Prosciutto, cow’s and goat’s curd with honey, cheese with truffles and olive oil were also indispensable.
This was followed by a typical Istrian pašta with black and white truffles.
The specialty was boškarin cheeks, prepared using the sous-vide technique, i.e. aged for 18 hours in a vacuum. Mashed potatoes with truffles, terano demi-glace and beetroot coulis. At the end, the guests were served a surprise dessert.
