This was one of our biggest private dinners. Although we had the opportunity to cook for a much larger number of people, it is much different in a restaurant environment where the availability of resources, such as equipment and groceries, is much greater.
Such spaces, without professional kitchens, bring with them much more unpredictable situations and therefore require much more improvisation.
Private dinning in Istria
The task was to organize a private dinner, with elements of catering (due to the number of people and the way of serving), for 45 people, in a holiday home near Poreč on the occasion of a birthday celebration.
The guests was from all over the world, so it was like that menu: diverse and rich. It was 4 courses, and they consisted of a hot and cold appetizer, grill (main course) and dessert. The meat menu prevailed, with the fact that vegan specialties and gluten-free dishes were prepared for a significant part of the guests.
